Fruity Pebbles

Another cereal that is gluten free is Fruity Pebbles. Yum. I also found some crackers from Costco that are very good and are gluten free.

White Bread Mix

Yesterday I made a loaf of bread using Bob's Red Mill bread mix. It turned out great. Today for lunch, I was so excited and ate 1/2 peanut butter and jelly - and - 1/2 ham and cheese sandwich. Both tasted so good on the bread. It was light and soft (better than frozen bread). It just takes some time to make but was pretty easy.

Dr. Oz

I have really enjoyed watching Dr. Oz. I have learned a lot from his show.

On one of his shows he talked about Chia Seeds. They have 5g of Fiber, 3g of Protein and 2.4g Omega-3. We put these in our smoothies, on our cereal or any food that we can sprinkle them on. They help you feel full faster. We bought them at the Vitamin Shoppe. But I also saw them at Costco.

Last week, Elisabeth Hasselbeck author of "The G-Free Diet" was on talking about her book. If you are interested in seeing it, I am sure utube has a clip of the show.

The G Free Diet

A friend of mine told me about Elisabeth Hasselbeck (she is on The View) She wrote a book called "The G Free Diet." She was sick for many years and could not figure out what was wrong with her. She ended up as a contestant on the show "Survivor" and had to live off the land in the Australian Outback and finally figured out what was causing her sickness...gluten. You get to "hear" her story and how her life has changed. This book is very good for those who have a gluten intolerance or for those with Celiac disease. It has a lot of good info to get you started on the right track to become gluten free. I bought it on Amazon for about $5.

Pasta No More?

I really miss eating my favorite pasta meals and salads! I am a huge pasta salad fan! My favorite is to eat at D'Amico & Sons. I used to get the sampler plate. My mouth is drooling just thinking about it. Last night I made a pasta salad using my brown rice noodles. It's a salad that I used to make all the time during the summer (I got the recipe from a friend) It's just not the same...I don't know if I will be able to get used to the taste.

Maybe it's a good thing that I don't eat pasta anymore.

I am still doing Zumba and like it a lot. I have maintained my 2 inch loss on my waist, but would love to lose about 2 more inches.

Big Bowl

Last night I had dinner with a friend at Big Bowl in Rosedale Mall. They had a gluten free menu! They actually had a lot of options to choose from - I was very impressed...a lot better than the options provided from the Applebee's gluten free menu. I ordered the chicken pad thai and my friend ended up ordering the 2 appetizer gluten free options and we share our meals. It was a delicious dinner!

This morning for breakfast, I had an egg and then had some millet bread that I toasted. This was the first time eating millet bread - it was very good and tasted like "real" bread. Millet Chai bread Udi's brand (of course). It has omega 3/6/9 and 5 grams of fiber. Good for you!

Too Much Work

Tonight I made a gluten free pizza. I used "King Arthur Flour" Gluten Free pizza crust mix. My friend, Rachel, told me that this is her favorite mix because it is closest to a "real" pizza crust. I am sorry Rachel, but I thought it was too much work to make and it didn't work out as I thought it would. It definitely did not look like the photo on the box! I probably just did something wrong.

I didn't tell Ben at first that it was a gluten free crust. He actually ate 3 pizzas and said it was fine, but thought the crust was too thick.

For Ben and the boys, it is just easier to order a pizza from  5 Dollar Pizza and I can make my own using the Udi's brand premade crust that I have used in the past.
