It has been 30 days since I became gluten free. It seems like A LOT longer though..I don't know why. In these past 30 days, I think that I have learned a lot and I have the rest of my life to learn even more. In 30 days I only felt bloated once! That is huge...a miracle. It is the best feeling to feel good - not bloated and uncomfortable.
In my last entry, I told you that we were in Medford, WI visiting Ben's parents and attending a wedding. Every time we go to Ben's parent's house, I tell myself "don't eat so much, eat in moderation" but every time, I overeat and I feel overstuffed. It's because Sally (Ben's mom) is a great cook and she makes wonderful meals and desserts! I always tend to eat more when someone else makes a meal and it always seems to taste better! But for the first time, I was more careful about what I ate and I feel great! Sally was so thoughtful and made Michele (my sister-in-law who is also gluten free) and I gluten free chips. She took gluten free tortillas, cut them up into triangles, sprayed them with PAM topped with salt and parmesan cheese and baked them until nice and crispy. They were delicious! Thanks again Sally! We ate them with home made salsa. Ben wants me to make them with cinnamon sugar.
I am proud to say that I passed on eating...wedding cake...coffee cake...and chocolate cupcakes. Yes I wanted to eat them, but they were easy to resist. Plus...just think about all the calories and fat I missed out on that my body doesn't need.
