I have used potato flour in a couple of baked goods...I have come to realize that I don't like it. Almond, Rice and Sorhgum flour taste a lot better.
Yesterday I made chocolate zucchini bread. I used a "flour blend" that had potato flour in it. I need to make a different flour blend without it. I split the recipe in half - not to waste anything if I didn't like it. I have made this originally with "regular" flour and the bread comes out very moist. This time with my flour blend, it came out very dense - still tastes good, but not moist like I want it to be.
Chocolate Zucchini Bread
Mix
3 eggs
1 cup olive oil
2 cups sugar
2 cups grated zucchini
2 tsp vanilla
Mix
3 cups flour (of your choice)
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 c cocoa
Blend dry to wet ingredients
Grease 2 loaf pans
Bake 350 degrees for 50 minutes
No dairy today - I used almond milk with my cereal - remember 50% more calcium than dairy milk.
