Tonight for dinner I made Lasagna. I made one for me and one for them (Ben and the boys) Lia had already eaten by the time it was done - she will eat it for lunch or dinner next day. I made mine with rice lasagna noodles and I made theirs with left over "regular" noodles that I wanted to use up. Next time, I will just use my rice noodles. I don't think anyone could tell the difference...
I layered the lasagna with store bought sauce, rotisserie chicken, ricotta cheese, sauteed onions, mozzarella and parmesan cheese and left over butternut squash that I roasted the other day. (a good way to get a vegetable in without anyone knowing).
For dessert I made apple crisp. One for them and one for me. The apples I used came from Ben's parent's apple trees. I found an easy recipe online. Bettycrocker.com
I made an individual one for myself - I pretty much quartered the recipe and used rice flour in place of the regular flour.
Apple Crisp
4 cups chopped apples
Combine and crumble over apples
3/4 cups brown sugar
1/2 cup flour
1/2 cup oats
1/3 cup butter softened
3/4 tsp cinnamon
1/2 tsp nutmeg
Bake at 375 degrees for 30 minutes 8 x 8 dish
