The Holidays are Coming

It's September...it's Fall... and today was a little chilly out. I am not ready for this weather...for winter to come, but I love the holidays. I have already been thinking about Thanksgiving and Christmas...yes a little early, I know. I have been thinking about all the delicious food and what I might miss out on.  For Thanksgiving...pies...I can make my own pie with gluten free crust, but then will others want to eat it? Maybe they won't even know...and stuffing...I love stuffing...will I miss it? or do I make my own? Christmas cookies...need I say more? I'll figure it out!

Today I made Roasted Butternut Squash Soup. (Foodnetwork - Barefoot Contessa). The whole house smelled like the holidays...it was wonderful.

Roasted Butternut Squash Soup



3 -4 pounds butternut squash, peeled and seeded
2 yellow onions
2 apples, peeled and cored
3 tbsp olive oil
salt & pepper
2 -4 cups chicken stock
1/2 tsp curry powder

Preheat oven to 425 degrees
Cut the butternut squash, onions and apples into 1 inch cubes. Place them on a sheet pan and toss with olive oil and salt and pepper. Roast for 35 - 45 minutes.

When the roasted vegetables are done, use a food processor or blender to puree the vegetables - add some chicken stock to help blend more smoothly. Place the puree in a large pot and add enough chicken stock to make a thick soup. Add the curry powder and more salt and pepper to taste.

Optional condiments for garnishing: scallions, flaked sweetened coconut, lightly toasted, salted cashews and/or diced bananas.

I used cashews. The soup was very tastey! I made the soup for when my mom comes over for lunch tomorrow....Ben probably would not eat this soup - it's squash and has no meat in it.  Lia loved it, I gave it to her for dinner tonight. I also froze some in baby food jars to save for future use.
